Broccoli in red

Lately I’ve been inspired by the Thai cuisine, and I had some sweet potatoes left and broccoli and thought I would build something that would taste a bit like Thailand. I’ve never been to Thailand before, but I had a bit of thai food from time to time from the local ethnic restaurants, so that’s why I think it’s a bit related.

  1. 2 sweet potatoes (medium)
  2. 1 onion
  3. 1 tsp turmeric
  4. 1 tsp salt
  5. 1 tsp coriander
  6. 1 tsp paprika
  7. 1 tsp vegetable stock
  8. 1 tsp chili flakes
  9. 100 ml rice milk
  10. 1 tsp soy sauce (optional)
  1. 150g red rice
  2. 450ml water
  3. 1 tsp salt (optional)
  1. Peel sweet potatoes and cut them in cubes
  2. Put them to boil for 12minutes at medium heat, until they become a bit soft.
  3. While waiting for the potatoes to boil, cut the broccoli and onion, to have it ready.
  4. 5 minutes before the potatoes are ready, add the onion a bit of warm water in a saute pan (large enough to fit all the vegetables).
  5. When it gets a bit golden, add broccoli and rice milk, along with the spices.
  6. Add the sweet potatoes as well and let them cook at low heat for 5 minutes more.
  1. Wash rice
  2. Add water to a pot and wait for it to start boiling
  3. Add rice and salt, and let it cook for around 20 minutes (usually there are instructions on the packages on how long it takes)
  4. When rice is done, add it to the vegetable mix and enjoy
