Broccoli in red
Lately I’ve been inspired by the Thai cuisine, and I had some sweet potatoes left and broccoli and thought I would build something that would taste a bit like Thailand. I’ve never been to Thailand before, but I had a bit of thai food from time to time from the local ethnic restaurants, so that’s why I think it’s a bit related.
Broccoli and red rice

Vegetables
- 2 sweet potatoes (medium)
- 1 onion
- 1 tsp turmeric
- 1 tsp salt
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp vegetable stock
- 1 tsp chili flakes
- 100 ml rice milk
- 1 tsp soy sauce (optional)
Rice
- 150g red rice
- 450ml water
- 1 tsp salt (optional)
Vegetables
- Peel sweet potatoes and cut them in cubes
- Put them to boil for 12minutes at medium heat, until they become a bit soft.
- While waiting for the potatoes to boil, cut the broccoli and onion, to have it ready.
- 5 minutes before the potatoes are ready, add the onion a bit of warm water in a saute pan (large enough to fit all the vegetables).
- When it gets a bit golden, add broccoli and rice milk, along with the spices.
- Add the sweet potatoes as well and let them cook at low heat for 5 minutes more.
Rice
- Wash rice
- Add water to a pot and wait for it to start boiling
- Add rice and salt, and let it cook for around 20 minutes (usually there are instructions on the packages on how long it takes)
- When rice is done, add it to the vegetable mix and enjoy
