Leftover pasta
Pasta time, had some leftover produce in my fridge, and instead of freezing them I decided to combine them to a delicious dish, most of my childhood we didn’t have much money, but always food on the plate, so I learned to use everything from my grandma, as she would put it, create amazing stuff from thin air hehe

Ingredients
- 100g shiitake mushrooms
- 50g spinach
- 240g cut tomatoes
- 1 green onion
- 1 tsp red paprika
- 1 tsp soy sauce
- 1 tsp veggie broth
- 1 tsp salt
- 1 tsp french herbs
- 30g black olives
- 500ml water
Pasta
- 75g whole wheat pasta
- 600ml water
Instructions
- Cut the onion, spinach, mushrooms, tomatoes and olives in small pieces
- Add one teaspoon of soy sauce in a pot and cook the onion until it gets golden
- Add the rest of the ingredients (without the spinach and the pasta) and cook on medium heat for 10-15 minutes
- Add the spinach and cook for 5 extra minutes
Pasta
- Cook the pasta separately 15 minutes on medium heat with one cube of vegetable stock.
- Drain the pasta and mix it with the sauce
