Leftover pasta

Pasta time, had some leftover produce in my fridge, and instead of freezing them I decided to combine them to a delicious dish, most of my childhood we didn’t have much money, but always food on the plate, so I learned to use everything from my grandma, as she would put it, create amazing stuff from thin air hehe

  1. 100g shiitake mushrooms
  2. 50g spinach
  3. 240g cut tomatoes
  4. 1 green onion
  5. 1 tsp red paprika
  6. 1 tsp soy sauce
  7. 1 tsp veggie broth
  8. 1 tsp salt
  9. 1 tsp french herbs
  10. 30g black olives
  11. 500ml water
  1. 75g whole wheat pasta
  2. 600ml water
  1. Cut the onion, spinach, mushrooms, tomatoes and olives in small pieces
  2. Add one teaspoon of soy sauce in a pot and cook the onion until it gets golden
  3. Add the rest of the ingredients (without the spinach and the pasta) and cook on medium heat for 10-15 minutes
  4. Add the spinach and cook for 5 extra minutes
  1. Cook the pasta separately 15 minutes on medium heat with one cube of vegetable stock.
  2. Drain the pasta and mix it with the sauce
