This is a great recipe if you have some leftovers in your kitchen (corn), and you want to cook something fast that is delicious and also filling. I sometimes substitute corn for other ingredients such as kidney beans or chickpeas, according to what I have in my kitchen.

Ingredients
  1. 80g mini mushrooms (I use the ones in a jar from Bonduelle)
  2. 150g fresh cucumber chopped
  3. 1/2 onion
  4. 1 small chilli
  5. 200g sweet corn (boiled)
  6. 1 tsp salt
  7. 50ml water
  8. 1 tsp soya sauce
  9. 1 tsp turmenic
  10. 1 tsp coriander or french herbs
  11. 3 whole wheat tortillas
Instructions
  1. Cut the onion in small pieces, and warm it up in a pot for 2 minutes on medium heat with a bit of water and soya sauce. Add the spices and the rest of the ingredients; mix everything letting it cook for 10-15 minutes, until the corn is soft and you can break it with a fork.
  2. If your corn is not pre-boiled, you need to boil it for at least 30 minutes before mixing it with the rest of the ingredients. I personally buy it in cans because it takes less prep time, and it's handy to have around in the kitchen.
  3. Warm up the wraps in a pan for 2 min on each side, add the mix and it's ready to serve.
  4. Enjoy
