Sweet potato stew

400g sweet potatoes
1 onion
70g tomato puree
1 chili (optional)
1 tsp salt
1 tsp black pepper
1 tsp french herbs
1 tsp paprika
1 tbsp soy souce
1 cube vegetable stock
200g organic soba noodles
1 tsp garlic powder
100g dried shitake mushrooms (or other type)
A bit of parsley on top


Soak the dried mushrooms for 15 minutes in water before cooking.
Sweet potato
Cut the sweet potato in small cubes and boil it for 20 minutes on medium heat in a pot in around 700ml water.
Begin preparing the sauce around 15 minutes after you started boiling the sweet potato.
Cut the onion in small bits and add it in a pan along with soy sauce and a bit of water (you can also use olive oil instead of soy sauce). After 2 minutes add the mushrooms along with the spices and the chili. Mix the tomato puree with a glass of warm water (cirka 250ml) and add it to the mix. Once the sweet potato has boiled, drain it and add it to the pan along with the vegetable stock cube.
While the sauce is boiling, start preparing the noodles which have to be boiled separately for around 5 minutes in enough water to cover them up.
After 5 minutes have passed, drain the water and add the noodles to the sauce mix, along with the rest of the ingredients. Leave it for and extra minute for the noodles to gather some of the sauces taste.
